Method
- Sauté garlic and ginger in oil until fragrant.
- Add all the vegetables; stir-fry on high 2 minutes.
- Add stock, soy, chilli sauce, vinegar, and salt; boil 5-6 minutes.
- Thicken with cornflour slurry until it coats a spoon.
- Serve topped with a nest of fried noodles and spring onion.
Notes
Manchow must be thick enough to hold the noodle nest on top — thin soup is a different (sadder) dish.
