Manchow Soup

The dark, garlicky Indo-Chinese soup crowned with fried noodles — thick, hot, and the starter of every family dinner out.

Ingredients
  

oil
garlic cloves, minced
ginger, minced
cabbage, finely chopped
carrot, finely chopped
capsicum, finely chopped
soy sauce
chilli sauce
vinegar
cornflour in 1/4 cup water
vegetable stock or water
Fried noodles and spring onion to top

Method
 

  1. Sauté garlic and ginger in oil until fragrant.
  2. Add all the vegetables; stir-fry on high 2 minutes.
  3. Add stock, soy, chilli sauce, vinegar, and salt; boil 5-6 minutes.
  4. Thicken with cornflour slurry until it coats a spoon.
  5. Serve topped with a nest of fried noodles and spring onion.

Notes

Manchow must be thick enough to hold the noodle nest on top — thin soup is a different (sadder) dish.
