The raw-mango summer shield — smoky boiled kairi blended with jaggery, cumin, and mint. The tastiest heat-stroke prevention there is.

Ingredients
  

raw green mangoes (kairi)
jaggery or sugar
roasted cumin powder
black salt
chilli powder
mint leaves
chilled water

Method
 

  1. Boil the mangoes until soft (or roast them for a smoky panna); cool, peel, and scoop the pulp.
  2. Blend the pulp with jaggery, spices, and mint.
  3. Mix with chilled water; adjust sweet-tang balance.
  4. Serve over ice — this concentrate also keeps a week refrigerated.

Notes

Roasting the mangoes over a flame instead of boiling gives panna a deep smoky base — the Bangladeshi street method.
