- Boil the mangoes until soft (or roast them for a smoky panna); cool, peel, and scoop the pulp.
- Blend the pulp with jaggery, spices, and mint.
- Mix with chilled water; adjust sweet-tang balance.
- Serve over ice — this concentrate also keeps a week refrigerated.
Notes
Roasting the mangoes over a flame instead of boiling gives panna a deep smoky base — the Bangladeshi street method.
