Lemon Coriander Soup

Ingredients
  

vegetable stock
cabbage, shredded
carrot, julienned
capsicum, sliced
garlic cloves, minced
lemon juice
coriander leaves, chopped
white pepper
cornflour in 2 tbsp water

Method
 

  1. Simmer the stock with garlic and all vegetables 5-6 minutes — vegetables stay slightly crunchy.
  2. Season with white pepper and salt.
  3. Add the lemon juice OFF the heat.
  4. Stir in the coriander and cornflour slurry if you want a little body.
  5. Serve hot — the aroma is the appetizer.

Notes

Lemon always goes in off the heat — boiled lemon soup turns flat and bitter within minutes.
