Prep Time 30 minutes
Cook Time 30 minutes
Total Time 1 hour
Servings: 6 servings

Ingredients

all-purpose flour
oil or ghee
ajwain
Water to knead
potatoes, boiled and cubed
green peas, boiled
cumin seeds
ginger, grated
green chillies, chopped
coriander powder
garam masala
amchur
Oil for deep frying
Salt to taste

Method

  1. Rub oil and ajwain into the flour until sandy; knead a stiff dough. Rest 30 minutes.
  2. Temper cumin; add ginger, chillies, peas, potatoes, and spices. Cool the filling.
  3. Roll ovals, cut, cone them, fill, and seal the edge with a wet finger.
  4. Fry on LOW heat until pale gold, then raise the heat for the final minute.
  5. Serve hot with tamarind and mint chutneys.

Notes

Slow frying makes the crust blister and stay crisp for hours — high heat makes it bubble and soften.
