Ingredients

  • 1.5 litres milk
  • 1/2 cup sugar
  • Saffron, cardamom, nuts

Method

  1. Boil the milk in a wide heavy pot on medium.
  2. As cream layers form on the sides, keep scraping and folding them back in.
  3. Reduce to a third; the milk turns thick with cream layers throughout.
  4. Add sugar, saffron, and cardamom; simmer 5 minutes.
  5. Chill and serve topped with nuts — or over jalebi for the classic combo.

Notes

Wide pot = more surface = more cream layers = better rabri. A narrow pot makes sweet thick milk, not rabri.
