The flaky Diwali staple — semolina-wheat mathi fried crisp, the jar snack that pairs with everything.

Ingredients
  

wheat flour
sooji
oil + ghee
ajwain + black pepper
Water and salt

Method
 

  1. Rub oil into flours with ajwain, pepper, salt.
  2. Knead stiff dough; rest 20 minutes.
  3. Roll thick small mathis; prick with fork.
  4. Fry on LOW until golden — slow frying makes them flaky.

Notes

Low heat is the mathri law — high heat browns the outside while the centre stays doughy.
