Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings: 10 pieces

Ingredients

maida
sooji
khoya or milk powder
Water to a pouring batter
Oil or ghee for frying
sugar
water
Cardamom and saffron

Method

  1. Whisk maida, sooji, khoya, and water into a smooth thick batter; rest 30 minutes.
  2. Make one-string syrup with cardamom and saffron; keep warm.
  3. Pour ladles of batter into medium-hot ghee; fry until the edges curl and both sides are deep golden.
  4. Dunk the hot malpuas in warm syrup for a minute; remove.
  5. Serve with rabri and chopped nuts.

Notes

The batter resting time makes the malpua edges lacy — fresh batter fries flat and dense.
