Ingredients
  

maida
semolina
sugar
ghee
egg
Oil for frying + sugar glaze

Method
 

  1. Knead maida, semolina, sugar, ghee into a stiff dough; rest 30 min.
  2. Roll marble-sized balls; curl each over a fork/comb into shell grooves.
  3. Fry on medium until pale gold and cooked through.
  4. Glaze in thick sugar syrup; cool on parchment until snow-white and crisp.

Notes

The comb-curl isn't decoration — the grooves catch the glaze and crisp evenly.
