Ingredients

  • 1 cup khoya
  • 2 tbsp maida
  • 1/4 tsp baking soda
  • Saffron, sugar syrup, pistachios

Method

  1. Knead khoya, maida, soda, saffron, and milk into a smooth, soft dough. Rest 10 minutes.
  2. Shape crack-free balls slightly smaller than you think — they grow.
  3. Simmer sugar, water, and cardamom into a light syrup.
  4. Fry the balls on LOW heat until deep golden — patience here is everything.
  5. Soak the hot jamuns in warm syrup for at least 1 hour. Garnish with pistachios.

Notes

If a ball cracks while frying, knead the dough more — cracks mean dry dough.
