Ingredients

  • 1.5 litres full-fat milk
  • 1/2 cup sugar
  • Saffron, cardamom, nuts

Method

  1. Boil the milk in a heavy wide pot; reduce on medium-low, scraping the cream from the sides back in — that's the basundi texture.
  2. Reduce by half (35-40 minutes).
  3. Add sugar, saffron, and cardamom; simmer 5 more minutes.
  4. Chill or serve warm with nuts scattered.

Notes

Those scraped-off cream layers folded back in are what make basundi (and rabri) rich — don't skip them.
